Instant Pot vegan chili with extra veggies
When eating a chili, little people don't look for the vegetables. They see tomatoes. So when you can sneak in extra vitamins, you should do that. The polenta (cornmeal) will give it even a smoother taste.

Ingredients
- 1 small onion chopped
- 2 garlic cloves chopped
- 1 medium carrot chopped
- 1 celery stalk chopped
- ½ red pepper chopped
- 1 tsp chilli powder
- 1 tsp cumin powder
- 1 tsp dried coriander
- ⅕ tsp cayenne
- ½ tsp smoked paprika
- salt and pepper to taste
- 8 oz can crushed tomatoes
- 8 oz can black beans drained and rinsed
- 8 oz can red kidney beans drained and rinsed
- ¾ cups vegetable broth or enough to cover everything
- 1 cup corn kernels
- 1 medium zucchini
- salt and pepper to taste
