Mixed spices, speculaas spices, cookie spices or pudding spice, is a British/Dutch blend of sweet spices, similar to the pumpkin pie spice used in the United States. Cinnamon is the dominant flavour, with nutmeg and allspice. It is often used in baking (the typical airline cookies), or to complement fruits or other sweet foods.

Speculaas spice mix
Make your own blend of these cookie spices to use in baking and add to fruit mixes.
Equipment
- Spice grinder
Ingredients
- 8 tsp cinnamon
- 2 tsp cloves
- 2 tsp mace substitute with nutmeg
- 1 tsp coriander
- 1 tsp ginger
- ¾ tsp cardemon
Optional
- 1 tsp anis
- ½ tsp white pepper
Instructions
- Add everything to a spice grinder and mix
- Store in an air tight container until you need it
